An easy, peasy – not so cheesy – recipe for vegan mac ’n’ cheese

Being vegan doesn’t mean having to miss out on the joy of feasting on mac ’n’ cheese. Here’s a recipe from ÃÛÑ¿´«Ã½ The Social for a delicious, dairy–free version of one of the world’s most loved comfort foods.

Vegan Mac n Cheese | HERE WE VEGAN GO!

Ingredients
Quantity | Ingredient |
---|---|
350g | Macaroni |
100g | Cashew nuts |
400ml | Coconut milk |
1 | Butternut squash |
1 | Onion |
3 pieces | Brown bread |
2 tsp | Mustard powder |
1 tsp | Nutmeg |
1 tsp | Nutritional yeast |
Method
Preparation
- Soak the cashew nuts in boiling water for 1 hour.
- Chop the butternut squash and onion.
Creating the vegan cheese sauce
- Boil the chopped onion and squash for 15 minutes.
- Add the coconut milk.
- Drain and then add the cashews.
- Blend the mixture.
Fake it so you don’t grate it: vegan cheese sauce

Saucepan stage
- Place the mixture in a saucepan.
- Add the mustard powder.
- Add the nutmeg.
- Add the nutritional yeast.
- Add a pinch of salt and pepper.
- Stir the mixture.
- Add the cooked macaroni and mix.

Baking stage
- Place mixture in an oven dish.
- Cover with breadcrumbs of 3 pieces of wholemeal bread.
- Bake at 200°C for 10-15 minutes.
Then all you have to do is get a plate and serve a hearty portion!
