An easy, peasy – not so cheesy – recipe for vegan mac ’n’ cheese

Being vegan doesn’t mean having to miss out on the joy of feasting on mac ’n’ cheese. Here’s a recipe from ÃÛÑ¿´«Ã½ The Social for a delicious, dairy–free version of one of the world’s most loved comfort foods.

Vegan Mac n Cheese | HERE WE VEGAN GO!

Ingredients

Quantity Ingredient
350g Macaroni
100g Cashew nuts
400ml Coconut milk
1 Butternut squash
1 Onion
3 pieces Brown bread
2 tsp Mustard powder
1 tsp Nutmeg
1 tsp Nutritional yeast

Method

Preparation

  • Soak the cashew nuts in boiling water for 1 hour.
  • Chop the butternut squash and onion.

Creating the vegan cheese sauce

  • Boil the chopped onion and squash for 15 minutes.
  • Add the coconut milk.
  • Drain and then add the cashews.
  • Blend the mixture.

Fake it so you don’t grate it: vegan cheese sauce

Saucepan stage

  • Place the mixture in a saucepan.
  • Add the mustard powder.
  • Add the nutmeg.
  • Add the nutritional yeast.
  • Add a pinch of salt and pepper.
  • Stir the mixture.
  • Add the cooked macaroni and mix.

Baking stage

  • Place mixture in an oven dish.
  • Cover with breadcrumbs of 3 pieces of wholemeal bread.
  • Bake at 200°C for 10-15 minutes.

Then all you have to do is get a plate and serve a hearty portion!
