Jenny Bristow's ѿýmade Lemonade and Fruit Punch

ѿýmade Lemonade
Ingredients
Makes one litre
Zest and juice of six lemons
150g/5oz granulated sugar
1 litre/three quarters of a pint of boiling water
275ml/half a pint of soda water
1 lime
Method
Put the lemon zest andjuice in a large bowl with the sugar and boiling water. Stir well, cover and leave for 24 hours
Strain through a fine sieve or a piece of muslin and pour into sterilised bottles. Cork, label and store in the fridge for up to a week
Serve diluted with soda water and a twist of lime
Midsummer Fruit Punch
Ingredients
Serves 6-8
125ml/4floz elderflower cordial
275ml/half pint of orange juice
Juice of two lemons
Juice of one lime
4-6 dsp of crushed ice
570ml/1 pint of soda or sparkling water
Fruit slices, borage flowers, strawberries and blueberries
Method
Mix together the cordial, orange juice, lemon and lime juice and leave to infuse in the fridge for 30 minutes
Pour the punch into a large jug, add the ice and top with the soda or sparkling water
Serve with the fruit slices and borage flowers, strawberries and blueberries
