Goat’s Cheese and Caramelised Onion Tart

Ingredients
450g puff pastry
2 tbsp olive oil
1 large red onion, thinly sliced
3 tbsp balsamic vinegar
1 tsp soft brown sugar
150g goat’s cheese, diced
salt and black pepper
Method
Preheat the oven to 200C fan (220C) / gas mark 7. ÌýLine a baking tray with greaseproof paper.
Roll out the pastry to a rectangle measuring approx. 25x30cm, then transfer the pastry to the lined baking tray. Prick the pastry all over with a fork.
Heat the oil in a frying pan, then add the onion, vinegar, sugar and a sprinkling of salt and pepper. ÌýCook over a medium heat, stirring frequently, for 10 mins, until the onions have softened and browned slightly. ÌýSpread the caramelised onion evenly over the pastry.
Scatter the diced goat’s cheese over the onion, then bake the tart in the oven for about 30 mins, until the edges of the pastry are golden brown. ÌýRemove from the oven and serve warm, or leave to cool.
Nadiya’s Tip
The tart is delicious served hot or cold. ÌýYou could serve it cold with salad or hot with some steamed vegetables. Yum!
Jack’s Bean Patties
Makes 6

Cooking time 30 mins
Ingredients
2 x 400g can butter beans, drained and rinsed
100g breadcrumbs
1Ž2 tsp paprika
1 tsp cumin powder
1 tsp mild curry powder
Handful of coriander, leaves and stems, roughly chopped
1 tsp salt
2 eggs
Method
Preheat the oven to 180C fan (200C) / Gas 6. ÌýLine a baking tray with greaseproof paper.
Tip the beans into a bowl and crush with a potato masher. ÌýAdd the breadcrumbs, spices, salt, coriander and eggs.
Using damp hands, mix everything together and make six bean patties.
Bake for 25-30 mins, until golden brown and crisp around the edges.
You can eat in baps as a burger or with a salad.
Nadiya’s tip
Don’t forget to give your hands a good wash with soapy water before you start!
