Suzie visits The Buck’s Head in Dundrum County Down. It's co-owned by Michelin star chef, Great British Menu finalist and local lad, Alex Green.
For starter, Alex’s creating a fine dining version of a mushroom tart with brown butter emulsion and bacon jam. Back in her kitchen, Suzie makes her version, a tasty brown butter mushroom tart.
For the main course, Alex rustles up his own home-reared dish – barbeque shorthorn beef, salt baked carrots, smoked potato mash, pickled onion and beef fat sauce. Inspired by Alex, Suzie cooks a pan seared fillet steak, baked onion and smoky lardon mash.
For dessert, Alex makes lemon meringue Pie - his way: lemon sponge, lemon curd, meringue and caramelised apple ice cream. Transported back to her childhood and in homage to her mother's favourite, Suzie’s also making lemon meringue pie – her way.
