Why are Cows' Gallstones So Valuable?

Used in Chinese medicine, gallstones from cows are worth up to Aus $30,000 (US $23,000) a kilo. One tiny diamond-like stone could be worth more than an abattoir worker's weekly wage. Why are they so valuable and how do you stop people stealing them? Gerard Murtagh is a gallstone trader.
