Traditional Belgian brewers, Cantillon, are under pressure from rising temperatures. Jean Van Roy is brewing beer in the same way his grandfather was in 1900, without any powered refrigeration. Their process relies on cool evenings to ferment the beer and the season keeps getting shorter
