Lancashire dairy farmer Joe Towers and his family have gone into business with London based baristas to create a milk brand especially for coffee. Shaun Young reckons it's crazy that baristas and coffee fans spend all their time talking about the provenance of the bean and how long it's roasted for, but not the milk that goes into so much coffee. He approached thirty different farmers before he and Joe hit it off. He explains what makes the perfect milk for the ultimate latte.
