Cambodia: Fish Amok
A recipe that dates from the Khmer empire, the classic Cambodian dish of Amok is a creamy spiced coconut curry. This dish can be made with fish, chicken or eggs, but is always called Amok as it describes the particular method of cooking, steaming the ingredients in a banana leaf.
