Jamaican brown stew chicken

Brown stew chicken is not as spicy as some other classic Jamaican dishes but it’s still packed with flavour.
Serves 4Ìý
Ingredients
·ÌýÌýÌýÌýÌýÌýÌýÌý 8 pieces of chicken thighs on the bone
·ÌýÌýÌýÌýÌýÌýÌýÌý 2tbs all-purpose seasoning
·ÌýÌýÌýÌýÌýÌýÌýÌý 2tbs chicken seasoning
·ÌýÌýÌýÌýÌýÌýÌýÌý 1tbs course black pepper
·ÌýÌýÌýÌýÌýÌýÌýÌý 3tbs mild curry
·ÌýÌýÌýÌýÌýÌýÌýÌý Olive or rapeseed cooking oil
·ÌýÌýÌýÌýÌýÌýÌýÌý 1 clove of garlic, crushed or grated
·ÌýÌýÌýÌýÌýÌýÌýÌý 1 large cooking onion
·ÌýÌýÌýÌýÌýÌýÌýÌý 1 tin tomatoes
·ÌýÌýÌýÌýÌýÌýÌýÌý 1 medium sized carrot , sliced into half centimetre discs
·ÌýÌýÌýÌýÌýÌýÌýÌý 2 handfuls chopped mixed sweet peppers (frozen is fine)
·ÌýÌýÌýÌýÌýÌýÌýÌý 1 teaspoon scotch bonnet pepper sauce
·ÌýÌýÌýÌýÌýÌýÌýÌý 1 teaspoon mixed herbsÌýÌý
MethodÌý
Rub the all-purpose seasoning, black pepper, chicken seasoning and mild curry well into the chicken and leave in the fridge to marinade overnight.Ìý
Heat a pan with the oil, when hot put the chicken in and brown on both sides.
Once browned, removed the chicken from the pan and set aside.Ìý
Put the onions, garlic and carrot into pan you’d used to brown the chicken and sweat of for about a minute.Ìý
Return the chicken into the pan, add the tomatoes, scotch bonnet pepper sauce, mixed herbs Ìýand mixed peppers and cook on a low heat for about 45 minutes.Ìý
Constantly taste and add more seasoning if necessary and keep adding small amounts of water.
Serve with rice and peas.
