Michelle Roach repurposed the bright yellow ice cream van nearly two years ago, and it now offers low cost food to 200 people a week.
The single mum lost her job and was then diagnosed with cancer when her son was born, leaving her struggling for food, and is determined to help others facing the same hardship.
