Leeds Uni uncover the oldest-known book on cheese

The 16th century manuscript depicts the earliest uses of cheese.

Tim Procter from Leeds University chats to Gayle Lofthouse about the amazing discovery.
‘A Pamflyt compiled of Cheese, contayninge the differences, nature, qualities, and goodnes, of the same’ dates from the 1580s. The 112-page, vellum-bound manuscript was unpublished and unknown until it surfaced at auction in 2023 and was acquired by the University.
