Leeds Uni uncover the oldest-known book on cheese
The 16th century manuscript depicts the earliest uses of cheese.

鈥楢 Pamflyt compiled of Cheese, contayninge the differences, nature, qualities, and goodnes, of the same鈥� dates from the 1580s. The 112-page, vellum-bound manuscript was unpublished and unknown until it surfaced at auction in 2023 and was acquired by the University.
