Lucy Taylor visits John Letts, an academic-turned-arable farmer who's growing ancient grains to turn into heritage flours on a farm near Great Missenden in Buckinghamshire. John believes his model of growing a diverse mix of hardy, traditional wheat varieties can help with crop resilience, pest control, soil health, nutrition and flavour. Now he's hoping to help rebuild grain economies in communities across the country, with his UK Heritage Grain Alliance - but how easy will that be?
