It’s Great British Beef Week. But if you were asked how beef tastes, how would you respond? Succulent, perhaps? Or meaty? It’s difficult to put in to words. But for one man, defining taste is both science and a career. Dr Phil Hadley is head of global supply chain development for AHDB, the board which represents amongst other things cattle breeders.
