The Henley Distillery was opened two years ago by Jacob Wilson, who is one of the youngest Master Distillers in the country. They’ve had a lot of recognition since that launch – and recently were honoured at this year’s Great Taste Awards. Sarah Walker chats to Jacob about how an ultimatum from his parents made him quit university and focus on his passion for creating drinks.
