approx 12 large)
450gms (1 lb) Strong plain flour
2 teas. mixed spice
50gms (2ozs) caster
50gms (2ozs) margarine or lard
50gms (2ozs) currants or sultanas
25gms (1oz) fresh yeast
2 large eggs milk
Put
the yeast into a measuring jug, add a little milk and using
a teaspoon mix it to a runny paste.
Whisk
in the eggs and make it up to 10fl.oz (½pt) with warm milk.
Mix the flour, spice and sugar together in a large bowl, rub
in the chosen fat, then mix in the fruit.
Pour in the yeast mixture and work together. Remove from bowl
and knead on a lightly floured surface until the dough is
smooth. Cut into 12 pieces and shape each into a ball.
Place
on a lightly oiled baking tray, flatten with the palm of your
hand and then mark with a cross using the back of a knife.
Put in a warm place to rise until double in size then bake
for 15-20mins. at gas 6/450ºf/220ºc/Aga roasting oven (set
the oven as they begin to rise).
Serve
warm, split, and spread with butter, or when cold freeze them
until required.
Lazy
Cook tips - my method for these buns and all bread is
to "shape it then bake it", it is very quick - very Lazy Cook.
Strong plain flour must always be used for bread making. Dried
yeast can be used, follow the instructions on the packet.
Fresh yeast can be frozen, freeze in 25g. (1oz) packets.

100gms
(4ozs) butter - soften
75gms (3ozs) caster sugar
4 large eggs
175gms (6ozs) bitter chocolate - melted 100gms (4ozs) ground
almonds
1 teas. instant coffee granules - stir into
1 tbls. hot water
Chocolate icing - optional (recipe below)
Set
oven at gas 4/400ºf/200ºc/Aga baking oven. Line a 16-17cm
(6"-7") cake tin with greaseproof and oil, (or a parchment
baking case).
Using
a large bowl whisk the butter and sugar and egg yolks until
they are light and fluffy.
Stir
in the melted chocolate, almonds and coffee. Whisk the egg
whites until they are stiff and stir these into the chocolate
mixture.
Pour
into the prepared tin, stand this on a baking tray and bake
in the pre-set oven for approximately 1 hour - it is baked
when a metal skewer pierced into the centre of the cake comes
out clean.
Cool
on a wire tray then top with chocolate icing (optional). Slice
to serve.

Lazy
Cook tips - this is a very delicious, rich, moist
chocolate cake with or without the icing. It can be served
as a cake or as a pudding with the addition of fresh fruits
i.e. plump black cherries, strawberries or raspberries. It
is an excellent cake to serve to those who are unable to eat
flour or wheat.
