100gms
(4ozs) s.f. flour
50gms. (2ozs) caster sugar
100gms (4ozs) butter - softened
3 large eggs
2 teas. extract of vanilla
50gms. (2ozs) grated chocolate
Set
oven at gas 4/400ºf/200ºc/Aga baking oven.
Line a 15cm (6") cake tin.
Put the flour and sugar into a food processor and process
for a few seonds to mix together.
Add
butter, eggs and vanilla and process until smooth.
Spread
half the mixture over the base of the prepared tin, cover
with half the grated chocolate then top with the remaining
cake mixture.
Smooth
the top and cover with the remaining grated chocolate.
Bake
in the pre-set oven for approximately 40mins. or until set.
Lazy
Cook tips - grating chocolate can be a messy and time
consuming job - being so lazy a cook, I buy tins of Charbonnel
et Walker,the Chocolat Charbonnel, it may seem extravagant
but it is a good quality chocolate and will save on time.
If
plain flour is used add one heaped teaspoon baking powder.
This
is a light and delicious cake without being over sweet.
Slice
to serve, store in an airtight tin.
