Bramble Meringue Pie

Serves 6-8

1 ready baked pastry case 450gms
(l lb) bramley cooking apples - peel, core and slice
225gms (8ozs) blackberries - wash sugar to taste topping
2 egg whites
100gms (4ozs) caster sugar
A few spots pink food colouring

Set oven at gas 6/450 F/220 C/Aga roasting oven.

Cook the apples and blackberries over a gentle heat with lid on pan, add sugar to taste and leave to cool a little while making the meringue.

Whisk the egg whites with a few spots of pink food colouring, until stiff and dry (of a cottonwool texture), then fold in the caster sugar.

Fill the flan case with the cooked apple and blackberry mixture and cover with the meringue. Bake in the pre-set oven until the meringue begins to brown.

Serve warm or cold with single cream.

Lazy Cook tips - the flavours of this pudding are excellent. It can be baked in the hot oven and when the meringue begins to brown the temperature can be reduced to gas 3/300 fF/150 C/Aga simmering oven to allow the meringue to become more crisp.

As a Lazy Cook I always keep a store of ready baked flan cases, these are available from most delicatessens or supermarkets.

With such ingredients to hand the pudding is made in minutes.
