Chicken
or Turkey with Apricots and Almonds |
Serves
6-8
450gms (1 lb) cooked chicken (or turkey) - break into mouthsized
pieces
250gms (8ozs) mushrooms - wipe and slice 100gms (4ozs) dried
apricots - cut into strips
a good sprinkling dried tarragon
1 x 205gm tin Campbells condensed mushroom soup
150ml (¼pt) white wine
150ml (¼pt) single cream
50gms (2ozs) flaked almonds - browned
Set
oven at gas 6/450ºf/220ºc/Aga roasting oven.
Layer
the chicken, mushrooms and apricots into a shallow ovenproof
dish and add the tarragon.
Put the soup, wine and cream into a pan and stir until boiling
then pour it over the chicken ingredients.
Scatter
flaked almonds on top and bake, uncovered, in the pre-set
oven for 20-30mins. or until hot and bubbling.
Lazy
Cook tips - prepare this in advance and store, covered, in
a fridge or cold larder and reheat to serve.
I
serve boiled rice and mixed vegetables with this recipe. It
is an excellent recipe if catering for lots of people.

175gms
(6 ozs) large raisins (or a mixture of raisins and sultanas)
3 tbls. brandy
200ml full cream milk
1 pkt marshmallows
1 teas. cocoa powder
1 teas. instant coffee powder or granules
50gms (2ozs) glacé cherries - chop or leave whole
50gms (2ozs) walnuts or almonds- chopped 300ml (½pt) double
cream for decoration (optional)
150ml (¼pt) double cream
a few glacé cherries angelica or crystalised fruit pieces
Method
Soak
the raisins in the brandy for at least 30mins.
Put the milk, marshmallows, cocoa and coffee into a saucepan
and heat gently until the marshmallows have melted.
Allow to cool before stirring in the raisins, brandy, cherries
and nuts.
Put into a 1 ltr (2pt) basin and freeze until it begins to
thicken. Whip the cream and fold into the freezing mixture,
repack into the basin and freeze until you wish to serve it.
To
serve, remove from the freezer and when it begins to soften
turn it on to a serving dish.
Put into a fridge or cold larder for 2hrs. to allow it to
thaw but retain its shape.
To
decorate (optional)
Llightly whip 150ml (¼pt) double cream and pour it on top
of the pudding allowing it to run down the sides and top with
cherries, angelica and nuts, or top with holly or a Christmas
decoration.
Lazy
Cook tips - a delicious pudding and too good to restrict to serving
only at Christmas. It can be made and frozen well in advance of
serving.
