Raspberry
Ripple Melba
To make 4
several scoops of raspberry ripple ice-cream
250gms.
(8 ozs) fresh raspberries -
wash raspberry fruit syrup (optional) 10fl.ozs double
cream – lightly whip ginger thin biscuits
grated bitter chocolate – optional
Put
scoops of ice-cream into individual stemmed glasses and top
with a few raspberries, sprinkle with raspberry fruit syrup.
Lightly whip the cream and fold in the remainder of the raspberries
and 8 or more crushed ginger thin biscuits, pile this on to
the raspberries, top each with a ginger thin biscuit and scatter
with grated chocolate – serve immediately.
A
delicious pudding to serve.

and assemble in minutes. Use more raspberries if available.
Pork
Steaks with fresh peach halves and a hint of sage
To serve 4
4 pork steaks a little flour seasoned with freshly ground pepper and
1 teas. sage 1 tbls. oil
4 peaches - cut in half and remove stones 25gms (1oz) butter
150ml (¼pt) stock
Set oven at gas 4/400ºf/200ºc/Aga baking oven.
Trim all excess fat from the steaks then coat them lightly
in the seasoned flour.
Heat the oil, add the prepared steaks and brown on each side,
remove from pan.
Add the butter to the pan and when melted add the peach halves
(cut side down), and cook until they begin to brown, remove
and drain off all excess fat from the pan before adding the
stock, scrape up all residue from the base of the pan and
bring the stock to the boil.
Return the steaks and the peaches (cut side up), bring to
a simmer, cover and bake in the pre-set oven for 30-40mins.
Or until the steaks are tender.
Serve on one large serving dish, or individual plates.
Lazy Cook tips - I buy shoulder steaks for this recipe.
If dried sage is used reduce the quantity added to the flour
by half.
