Baked Avocado with Goats Cheese
Serves 4
2 avocado Apple purée
4 slices goats cheese

Set oven ag gas 6/450ºf/220ºc/Aga roasting oven
Cut the avocado in half lengthways and remove the centre stone.

Fill the cavity with apple purée and top with a slice of goats cheese.

Put in an ovenproof dish, or metal tray, and bake in the pre-set oven for 10-15mins.

Lazy Cook tips – to prevent the avocado wobbling about, shave a little of the skin from the base of each half before filling. If the avocado is a little unripe baking will soften it.

Heat under a grill if it is more convenient. Ready-made apple purée can be used. Use small avocado if serving as a starter.

Apple purée
Peel, core and slice bramley apples into a pan with just enough water to moisten the base. Add several whole cloves (optional), place lid on pan and cook over a gentle heat until the apples pulp and rise in the pan.

Remove from the heat and use immediately or allow to become cold and store, covered, in a fridge or cold larger. Use within 4 days. To freeze remove the cloves and pack the cold purée into freezer bags of varying sizes.

Figs in Blankets in little bread baskets
1 fresh fig
1 rasher back bacon a little made English mustard 1 bread roll – brown or white a little oil

Set oven at gas 6/450ºf/220ºc/Aga roasting oven.
Wrap the fig in the bacon rasher and stand it in a lightly oiled shallow ovenproof dish and bake, uncovered, for 8-10mins or until the bacon is cooked.
Cut the top from the roll and scoop out the centre to form a cavity. Lightly butter or oil, put on a baking tray and bake until brown and crisp.

Remove from oven and spread a little made mustard on the base before putting the baked fig inside. Pour any juices in the pan over the fig.

Lazy Cook tips – this is an unusual but good way to serve fresh figs, serve as a starter allowing one per person and perhaps accompanied by a little fresh watercress. If baking several place them in the dish with the loose bacon ends touching and this will prevent the bacon unwrapping itself from the figs. The bread baskets can be crisped in the same oven as the figs – use the tops and centre bread to make into breadcrumbs. Serve hot or cold.
