Fruit Alaska

Makes 8-10 slices

1 large ready baked sponge flan case - buy
1 x 750ml. carton vanilla ice cream
450g (1 lb) frozen fruits and berries
4 egg whites
few spots pink food colouring - optional
225g (8oz) caster sugar

Set oven at gas 6/200c/180fan/Aga roasting oven 3rd runner down.

Place the flan case on a baking tray lined with bake-o-glide or lightly oiled. Fill the centre cavity with the ice cream and top with the frozen fruits.

Whisk the egg whites and food colouring at high speed until they are stiff and dry (of a cottonwool texture). Reduce the speed whilst slowly pouring in the sugar until it has all mixed in.

Spread to completely cover the filling and touch the sides of the flan and bake immediately in the pre-set oven for 5-10mins. or until the meringue begins to brown. Turn the oven off, leave for 5 mins then remove the flan and ease from the baking tray on to a serving dish using a long palette knife or fish slice and serve immediately.

Lazy Cook tips

When the pudding is served the fruits should be firm though de-frosted, test with a metal skewer and if necessary return to a warm oven for 5-10 mins.

If you cook by Aga, once the meringue top has browned transfer to the simmering oven for 5-10 mins before serving.

With all the ingredients in store, this pudding is quickly assembled between courses. A great family treat.
