pudding rice
1 desst. granulated sugar
600ml (1pt) full cream milk
a nut of butter
freshly grated nutmeg
Set
oven at gas 4/400 F/200 C/Aga baking oven.
Wash the rice before putting it into a one pint oven-proof pudding
dish.
Add all remaining ingredients and stir well. Place on a baking tray
and bake for 20-30 mins. in the pre-set oven, then reduce the temperature
to gas 3/300°F/150 C/Aga simmering oven for a further 1 hr.
or until the milk has been absorbed into the rice and the texture
is soft and creamy.
Serve hot or cold.

the pudding before it was cooked.

Put
cold rice pudding into individual wine or sundae glasses. Top with
vanilla ice-cream then with slices of pear (fresh, or from a tin).
Top with a spoon of whipped cream and finally scatter with a mixture
of grated chocolate and chopped walnuts
