Meme’s Toffee Apple Pudding
This is a delicious and simple family recipe that is perfect on a cold winter’s afternoon.
For the pastry….
12oz Plain flour
4oz Lard
2oz Trex
3oz cold water
For the filling….
2 good sized Bramley apples
For the topping…
A good sprinkling of Demerara sugar and the same of Golden Syrup

Line a 7 by 9 inch rectangular pie dish (it needs to be quite deep) with pastry. You can used a good bought one or make the one my Grandmother always does which is really simple. Just blitz the flour , lard and Trex in a food processor until it looks like bread crumbs (a couple of pulses is usually enough) and then add the water and whizz until it begins to come together. You can then tip it out on to a floured surface and squish it together. Meme never bothers resting it, but if you’re fussy about that then let it rest whilst you peel the apples. Use just over half to line the dish.
Peel and slice the apples and layer them in the lined pie dish, sprinkle over a table spoon of caster sugar and about half a teaspoon of ground cinnamon.
Roll out the rest of the pastry and lay it over the apples making sure that there are no holes and that the edges are well sealed.
Now sprinkle over a thin layer of the sugar and a good couple of table spoons of Golden Syrup (it will all meld together when it goes in the oven) and then dot the top with a few shavings of cold butter.
Now pop it into the oven at gas mark 4 for 40 minutes.
