Food Friday - Brownies
Ben Jackson's joined by Bina Sitaram, for another food Friday.
The Ultimate Eat Clean Brownies
1 1/2 Cup blended sweet potato (1 medium size Sweet Potatoe should yield this amount)
2/3 Cups of ground Almonds
1 Organic Egg
1/3 Cup Melted Coconut Oil
1/2 Cup Raw or Organic Honey
3 Medjool Dates
1 1/2 tablespoon chopped walnuts
1 tablespoon chopped walnuts to decorate
1/3 cup Raw Cacao Powder
1 tsp Baking Powder
1 tsp Vanilla Extract
Pinch Pink Himalayan salt
Preheat Oven to 180 Degrees
Line a square or 1 lb loaf baking tin with baking paper
Peel sweet potato and cook until soft.
Blend in a blender with the dates
Combine Ground Almonds, sweet potatoes, baking powder, pink salt & raw cacao
In a separate bowl whisk together the coconut oil, honey, vanilla extract and egg (make sure the oil has cooled right down or else you will end up with scrambled egg!)
Fold dried ingredients into the wet ingredients and pour mixture into the baking dish.
Bake for 30 -35 minutes or until a fork comes out fairly clean.
Let Brownies cool for 30 min (that's the hard part!)
Enjoy with some oat cream or raw ice cream.
