Christmas Biscotti.
Ingredients:
• 175g plain flour plus extra for dusting
• 1 tsp baking powder
• 125g light muscovado sugar
• 2 eggs beaten
• 50g mixed dried fruit (Sultanas, raisins and mixed peel)
• 50g chestnuts (cooked vacuum packed ones) chopped roughly
• Sprinkle of cinnamon
• Sprinkle of nutmeg
Method:
• Preheat your oven to 180 c
• Pop some grease proof paper onto your baking tray.
• Mix all dry ingredients together in a bowl.
• Add in your eggs, chestnuts and fruit and mix well with a spoon.
• Bring the dough together with your hands and place onto a lightly floured surface.
• Make into a fairly flat, sausage like shape. ( Quite rectangular )
• Place onto a baking tray and cook for 20 minutes.
• After 20 minutes, turn down your oven to 140c, place your dough onto a chopping board and cut into 1cm thick biscuits.
(This stage you can freeze once cooled)
• Lay them flat back onto the baking tray and place back into the oven for 15 minutes
• Pop onto a wire rack to cool or even eat warm with a festive tipple/hot drink of your choice.
