Ingredients:
Guacamole:
Half a small red onion
1 or 2 chillies
3 ripe avocados
1 bunch of fresh coriander
6 ripe cherry tomatoes
2 limes
Extra virgin olive oil
Salsa:
6 tomatoes
1 sprinkle of coriander
1 onion
2 fresh chilli peppers
1 large garlic
2 chillies
1 or 2 limes
Virgin olive oil
Tacos:
Wholemeal and plain flour with water.
Recipe:
Guacomole method:
Slice the skin of the avocado then tear it apart from the inside, remove the seed from the middle.
Then use a potato masher to squish the avocado smooth. Once it's smooth add very finely chopped medium sized garlic.
Add the ends of a chilli pepper so there very small and mixed in. Add a pinch of salt if you think it needs it.
Add tomatoes, the amount of 2 finally chopped, and some lime juice (cut and squeeze from lime) and then half a tea spoon of oil.
Salsa:
Put tomatoes in to boiling water then peel of skin gentle to reveal the inside of the tomatoes then cut them into quarters and put them in a food processor to pulse the mixer making it juicy and thick.
Chop onions finely and pop in food processor with tomatoes then pulse for 30 seconds, then drain to take most of the juice out then put mix in another bowl then finely chop chilli chillies and put in on as well with coriander, chilli powder and garlic.
Tacos:
Gently add water to both flours in a bowl until a thick dough then roll it out till thin as paper then cut out with a large cut out circle.
Put it in a frying pan with vegetable oil. When sizzling, add your taco, then put burger spices on both sides and lift from pan when brown.
Put on a baking tray to form a taco shell, then put in oven for 5 to 10 minutes to crisp.
