Food Friday - Orange and Cranberry Loaf

As we hit December, Lisa James shows us festive baking the kids can get involved with.

With Christmas just around the corner, we thought it would be nice to do a bit of festive baking that children can get involved with too.

So today we're in Glenfield at the home of Lisa James who runs the Little Cook's Club.

Ingredients:

1/2 orange
63g fresh cranberries
1/2 tsp baking powder
112g self raising flour
2 eggs
112g caster sugar
112g butter/margarine
1 tsp caster sugar for sprinkling over cooked loaf

Method:

Cream together the butter and sugar, add the zest of half an orange (or more or less, according to your taste)
Add the eggs and stir
Add the flour and baking powder
Stir well until the mixture comes together
Add the cranberries and mix gently, just to combine
Pour the mixture into a loaf tin, lined with parchment paper, or into cupcake/muffin cases (you should be able to make 12)
Pop into a preheated oven (160/170 degrees) for around 25-35 minutes, until the top of the loaf is golden
Allow the loaf to cool for a few moments, then prick holes all over with a fork
Sprinkle a teaspoon of caster sugar over the top
Squeeze half of a fresh orange and pour the juice over the top
