Food Friday - Boozy Bara Brith
This recipe from Hazel Paterson will keep you warm and goes great with a cup of tea.
Boozy Bara Brith
Traditionally this isn’t iced but we do love the addition of icing and some nuts for texture. It makes 2 x 2lb loaves.
Ingredients:
500g dried fruit mixture
500 ml boiling water
100ml spiced rum
1 teaspoon ground ginger
1/4 teaspoon ground mixed spice
1 cinnamon stick
1 teaspoon vanilla paste
3 cardamom tea bags (or use plain or chai tea bags)
2 eggs
500g self raising flour
400g soft light brown sugar
1 x 300g pot ready made buttercream icing
Handful toasted chopped hazelnuts
Method:
Heat oven to 150C.
Combine the boiling water, tea bags, rum, cinnamon, ginger, mixed spice and vanilla paste and allow to steep for 30 minutes then pour over the dried fruit and leave overnight.
The following day mix the eggs into the wet mixture then fold in the flour and sugar.
Line the loaf tins with baking parchment and then fill with the cake mix. Bake for around an hour or until a skewer comes out clean from the centre. Leave to cool completely.
Ice with the buttercream then scatter over the nuts.
Enjoy with a cup of tea.
