Rice bomb

This recipe was my grandmother Vincenza's recipe, that my mother Peppina cooks on the festive occasions. I also cook the “BOMB” for lunches with guests, because this complete meal is very much liked by everyone. I think it is called “BOMB” for its hidden content, which “explodes” with surprising flavours when you cut it into pieces.

Ingredients

  • 700g long-grained rice
  • 75ml (6 tbsp) oil (preferably olive oil)
  • 50g butter
  • 1 medium sized onion, finely chopped
  • 700g meat: 500g veal meat for stewing and 2 big sausages, cut into pieces (otherwise choose your favourite meat: pork meat for stewing, chicken or pigeon - deboned after cooking in the sauce - and their giblets also if you like them).
  • 250ml tomato puree
  • 2 eggs
  • 150g cheese, grated (preferably Parmesan cheese)
  • 220ml milk
  • 220ml water
  • Breadcrumbs
  • Cubes of butter
  • Salt and pepper
  • Optional: 1 handful dried porcini mushrooms, soaked in a cup of tepid water for 30 minutes. Drain well and mince a little. Put in the saucepan at the same time that you add the meat.

Instructions

  1. First make the sauce. In a large saucepan, heat the oil and the butter, add the onion and cook until the onion is soft and translucent but not brown, then sauté the meat and the sausages on all sides for about 3 minutes.
  2. Add the tomato puree and water, salt and pepper. Let this come to the boil, cover and simmer until the meat is cooked, then take out the meat and put it on one side.
  3. Meanwhile in salted water partially boil the rice (7 minutes), drain and when it’s cold add the sauce described above, the milk, the eggs and the Parmesan cheese. Blend all the ingredients and add salt and pepper to your taste.
  4. Oil well a non-stick mould (or a mould covered with oven-proof paper), then sprinkle breadcrumbs on the bottom and sides.
  5. Pour one half of the rice mixture into the mould, then add the pieces of meat and sausages (which have been removed from the sauce.)
  6. Cover with the other half of the rice and flatten the surface with a spatula so that the two layers of rice come together.
  7. Sprinkle more breadcrumbs on the surface and put on the cubes of butter.
  8. Bake on the middle shelf of a moderately hot oven at 180° C for about 50 minutes, until the crust is golden brown. Take the mould out of the oven and allow to cool for a few minutes.
  9. Turn out on a platter and serve the BOMB cutting it into big slices (one per person) in front of fellow diners, amazing them with the content’s “explosion” of surprising flavours.

This serves 8 people.

Hi everybody! I'm the Rice Bomb's cook! Can I thank here all the people for their opinion about my Bomb Rice recipe and answer some of all their lovable comments ?

I have to specify that it's said this recipe's name derives from the hemispheric shape of the baking mold used traditionally , then the timbale can seem a bomb ! But no everyone owns that mold, so I preferred ascribe a more suggestive meaning, to exalt the dish's taste and the pleasant feel between the diners. And I can add another one meaning if I think about this timbale's calories :it's like a bomb! However it's a complete meal and a moderate portion cannot compromise the diet. I agree it's possible to find some likeness with Arancini, the delicious Sicilian speciality :I well Know the little ones, the little rice's balls filled with meal ragout , peas and stringy cheese, like little oranges for their color and shape ( I ate them many times during the travels in Sicily to visit my father's relatives in the past: thanks for recalling in my mind those adolescence's beautiful moments).But I never saw a pyramidal Arancina as big as a "timbale": it's very interesting!

About the rice's cooking:if you use long grained rice for "risotto" (its normal cooking is about 18 minutes ), 7 minutes of boil is the right time in order to prepare the bomb, believe me , the resultant cooking ,after the oven, is right for this dish,the taste is good!

Alternative ingredients:I'm sorry in knowing butter and cheese are so expansive or difficult to find for some people in the world. I think it's possible to use margarine or add oil instead butter (however if you like and you need butter for other recipes you can find and see on Internet how to make it at home with fresh cream: it's very easy ).But I don't know an alternative for the cheese which gives its taste and helps to assemble all ingredients together. So I think it's possible to substitute Parmesan with another seasoned cow's cheese ( or goat, sheep's cheese also), otherwise : proof to add other eggs (one or two) to better assemble the ingredients, giving up the cheese's taste!

My last suggestion:when I have few time to spend in my kitchen, I prepare the Bomb in two times, cooking the meat sauce one day before.It's very useful!

Very good recipe! It seems to the one my (also) italian family used to cook... is different but as good as that one. They only differ from one another in their main ingredient: we didn't use rice, instead we cooked it with massa (usually when it was did more than enough, we added eggs, milk and cheese to the leftovers and bake, covering it with tomato sauce). This result is different and as good as it is because it is properly intended.I tried and found it delicious! I'm becoming a cook because I'm experimenting all these so diverse recipes that fasten together look a very very posh collection!
