Cock-a-leekie soup
Ingredients:
1 x 1.5kg chicken
200g pearl barley rinsed in cold water
Bouquet garni – bay leaf, celery, thyme
2 medium leeks, split washed and chopped
Handful parsley, chopped
Method:
Place the chicken in a pot and cover with cold water.
Take 2 x 5cm pieces celery and place a few sprigs of thyme and a bayleaf in between.
Tie with a string and place in pot with chicken. Bring to the boil and simmer for an hour.
Add the barley and cook for about another hour or until tender. Remove chicken and rest.
Add the leeks to the soup and cook for about 10 minutes or until soft.
Shred the chicken and add to the pan with the parsley and bring up to heat.
Check seasoning and serve.
