This
recipe is for Chicken Wings in Cajun Spice with Aromatic Salsa and
Mustard Dip.
Ingredients
Chicken
Wings
Cajun Spice
Cucumber Diced
Peppers Diced
Red Onion Diced
Diced Olives
Chopped Coriander
Turmeric
Paprika
Nutmeg
Lime Zest and Juice
Olive Oil
Kitchen Garden Preserve or Selsley Mustard
Natural Yoghurt
Cerney Goats Cheese Diced (or
alternative Gloucestershire Cheese)
Instructions
This
is simple. Coat the wings in loads of Cajun spice or perhaps an
alternative of your choice. Fry them gently till crisp and cooked
in a touch of olive oil and small knob of butter.
Stir-fry
very quickly all of the diced vegetables and cucumber with a little
mixture of the various herbs, spices and juices. At the end fold
in some diced cheese so it starts to lightly melt.
Mix
a couple of teaspoons of Locally produced mustard into the yoghurt
as a little dip to accompany them.
Place
the wings on top of the Salsa with a dusting of mustard cress and
the dip on the side.
A cheap,
easy and healthy snack using leftovers and trimmings to nibble on
in front of the television.
