CARAMELIZED BANANA BROWN BUTTER FRENCH TOAST

For the French toast
1 thick slice of brioche bread
80g double cream
80g milk
2 eggs
1 tsp vanilla
1 tsp cinnamon
Butter
Granulated sugar and cinnamon for coating.

Crack the eggs into a bowl and whisk gently, using a fork. Add the milk and double cream, along with the cinnamon and vanilla and continue whisking.

Dip a slice of bread into the mixture and let it soak slightly.

Heat butter in a frying pan until it starts to bubble and brown. Allow to brown for a few minutes, ensuring that the butter doesn't burn.

Once the butter has browned place the coated slice of bread into the pan.

Allow the bread to take colour and crisp. Turn and cook on the other side.

Take it off the pan and dip in cinnamon sugar.

For the topping
1 banana
A few knobs of butter
1 tbsp brown sugar
½ tsp cinnamon
Pecan nuts, chopped
Maple syrup

Cut the banana in half, lengthways. Coat with sugar.

Heat butter in a frying pan, place the banana in the pan with the sugar coated side down. Leave for a few minutes until they start browning, turning the heat down so that the bananas don't burn. Turn and brown the other side.

To assemble the toast, place it on a plate. Put a few spoon of yoghurt and banana on top, drizzle with maple syrup and sprinkle with pecan nuts for crunch.
